MCS Hot-Pressed Pizza

Hot-press is one of the most well known processes for producing pizza on large scale.

This concept can be easily adopted in existing lines, replacing the make-up equipment. We can provide technical solutions and systems suitable for the entire line. Thanks to our engineering efforts, we have achieved extremely high flexibility, helping customers broaden their portfolio of products. Hot pressing can be done on either trays or on special conveyors depending on the customer choice. The two processes differ.

Hot pressing on trays:

  • dough pieces are fed to the line coming from the proofer
  • they are precisely aligned in a row
  • a first row of heads provide a first gentle pressing (no heat applied)
  • dough pieces are transferred under pressing heads which perform the final flattening
  • pressure and temperature applied push the dough to the tray walls to create the rim and fix the diameter

Hot pressing on conveyors:

  • dough pieces are fed to the line coming from the proofer
  • they are precisely aligned in a row
  • then are transferred under pressing heads which perform the final flattening
  • pressure and temperature applied are sufficient to guarantee the roundness, thickness and shape of the end product

The complete system is designed to reduce downtime and maintenance costs.
