Driem Dough Portioning Unit

Dough portioning unit – for cutting the dough batch into smaller chunks to be processed.

 

The chunker walls have a non-stick coating and guide the dough to two cutting rollers which portion the dough batch into chunks and then drop these onto the dough infeed conveyor. This conveyor transfers the chunks, which overlap each other at the end of each dough chunk, toward the “Dough DrieMer” sheeting unit.
